Vital Ingredient Author Profile: I am Laura Jean, the Cooking Queen.

I am Laura Jean, the Cooking Queen.  My kingdom is my kitchen,  My diners are my pawns,  Most of them however survive my end game.  I learned how to cook from my mother, who was an old Southern Soul Food cook, who never owned a cookbook.  She could cook anything and she kept all of her recipes in her head.

I soon left home, however, and discovered international cuisine,  I love to try different things, but I still love fried chicken and sweet potato pie.

While my mother was born in South Carolina, I am a native Philadelphian.  The sandwich that the city is famous for is not really  my favorite sandwich.  Most people want to try our cheesesteaks, next time ask for an Italian hoagie, or go down to Reading Terminal and ask for DiNic's ham and broccoli rabe with cheese.
I meanwhile, have my own recipe for philly cheese steak.
Start with some Vidalia onions, they only grow in Vidalia, Ga. and they only come out in the
spring.  There are  imitations in the markets from South America, but they are not the same, add
some thinly sliced steak and some Jarlsberg cheese.  Try to get the best Italian rolls you can buy.
Then you will have a cheesesteak fit for my royal guests.

Hi! My name is Maria Allison. I live in Center City, but I spend most of my time in the wondrous 19104. My favorite Philly food is definitely a DiNic's roast pork sandwich with provolone and broccoli rabe--you can find one at Reading Terminal Market!

I don't have a favorite dish to cook, but I go weak in the knees for a good bowl of macaroni and cheese. The more cheeses the better! Buffalo mac n' cheese, brisket mac n' cheese, mac n' cheese balls, I like it all(s).

Favorite snack: aaalllll the berries.

I'm most interested in learning the proper basics of cooking--I taught myself almost everything I know, and I look forward to learning from the best!

Vital Ingredient Author Profile: Valerie

Hi, my name is Valerie. For a large portion of my life, I have been a West Philly resident. I love all types of foods: Middle Eastern, Mexican, Thai, Indian and Italian. My favorite food is sushi. I'd love to travel to Japan to experience the best sushi they have to offer.

I typically snack on cheese and crackers or hummus and crackers. Every night you will find me relaxing with a nice tall mug of tea. I love all types of teas and have an extensive teapot collection to suit my fancy.

I'm interested in learning about proper knife skills, ideas for creating a soup base as a starter to other soups and also creative ways to make salad dressings.

I eat soups year round and experiment with a variety of recipes. I'm not that big a fan of the chilled soups, but will explore them as an option during the warmer months.

I have a large garden, grow all types of vegetables, and love all types of flowers. Call me the Flower Lady.
