Chef Brian did a wonderful job explaining, and introducing to some, the plethora of lettuces widely available. Did you know that some lettuces are classified as leafy and some are not? Who knew???? They all seem to bear leaves, thus, in my limited knowledge, I assumed all would be classified as "leafy."
